USDA Choice Beef Chuck Shoulder Clod is a full-case, bulk purchase priced per pound, making it ideal for restaurants, caterers, and high-volume buyers. The shoulder clod comes from the chuck primal—the front shoulder region of the animal above the brisket—and is composed primarily of the triceps brachii and brachialis muscles. This well-exercised area produces beef with an intensely beefy flavor and generous marbling throughout.
USDA Choice grade offers superior marbling compared to Select grade, resulting in better tenderness, juiciness, and richer flavor. The additional intramuscular fat makes Choice grade shoulder clod suitable for a wider range of cooking applications and produces more consistent, satisfying results.
