USDA Choice beef top sirloin, trimmed and sold as a full case. This cut comes from the sirloin subprimal near the rear of the cow and is divided into top and bottom sections, with the top sirloin being more tender. USDA Choice grade beef has less marbling than Prime but is still high quality, producing very tender, juicy, and flavorful roasts and steaks from the loin. The trimmed cut has excess fat removed, making it a leaner option.
Top sirloin is ideal for dry-heat cooking methods including grilling, broiling, and pan-searing. It works well cooked from rare to medium doneness. For pan-searing, generously season with salt, heat oil in a skillet over high heat, sear for 2 minutes per side, then finish in a 350°F oven to desired doneness. For roasting, start at 450°F for 15 minutes uncovered, then reduce to 325°F and cook until internal temperature reaches 135°F for medium-rare.

Top sirloin is a lean, high-protein cut with relatively low sodium (45mg per 100g) and zero carbohydrates. It provides excellent sources of selenium (21.3mcg) which supports immune and thyroid health, and phosphorus (206mg) essential for bone health and metabolism. The cut has firmer texture than some other steaks due to coming from an exercised area, giving it just the right amount of chew while remaining tender.
