The "lip-on" designation means the cap muscle and outer fat layer remain attached, preserving the cut's natural shape and contributing to a richer flavor and superior moisture retention during cooking. The rib bones are left intact, making it ideal for presentation as a classic standing rib roast.
Graded USDA Choice, this ribeye falls just below Prime in marbling, but still delivers excellent tenderness, juiciness, and beefy flavor when roasted. Choice-grade rib roasts respond beautifully to dry-heat cooking methods — oven roasting, smoking, or reverse-sear — and are well-suited for holiday centerpieces or large gatherings. Plan on approximately one pound per person for a bone-in roast.
