This is a USDA Choice beef butt tenderloin sold as a full case, priced per pound. The "butt" refers to the thicker, larger end of the whole tenderloin (the psoas major muscle), while "peeled" means the silver skin, tough connective tissue, and the side chain muscle (psoas minor) have been professionally removed before packaging.
