The "butt" refers to the thicker, larger end of the whole tenderloin (the psoas major muscle), while "peeled" means the silver skin, tough connective tissue, and the side chain muscle (psoas minor) have been professionally removed before packaging.
Buying a peeled tenderloin eliminates the time-consuming butchering work required with a whole unpeeled tenderloin. With the silver skin and connective tissue already removed, the meat is ready to be sliced into filet mignon steaks or roasted whole.
