This product is similar to Costco's "peeled extreme" tenderloin preparation, where the fat, silver skin (tough connective tissue), and chain muscle (psoas minor) are removed, leaving primarily the main tenderloin muscle (psoas major) and wing (iliacus muscle). The trimming significantly reduces waste and prep time compared to untrimmed whole tenderloins, though the per-pound price is typically higher to reflect the processing.
