Beef loin flap meat, also known as bavette steak, is a tender and flavorful cut from the bottom sirloin section featuring USDA Choice grade quality. This cut features long strands of loosely connected muscle fibers that become incredibly tender when sliced against the grain. The open grain structure allows the meat to absorb marinades exceptionally well, making it ideal for fajitas and stir-fries.
This versatile cut is perfect for grilling hot and fast to rare or medium-rare doneness, then slicing thin across the grain for fajitas, tacos, and sandwiches. It can also be cut into thin strips for quick stir-fry dishes with vegetables. The meat has plenty of beefy flavor and tenderness that rivals more expensive cuts. Note that this product is blade tenderized by Costco for enhanced tenderness and must be cooked to an internal temperature of at least 145°F for food safety. Sold by the pound.
