Costco's Whole Pork Leg Full Case is a bulk, per-pound purchase of fresh whole pork legs sourced from the hind leg of the hog, also known as fresh ham. Sold as a full case for commercial or large-scale use, this cut is priced per pound and is ideal for restaurants, caterers, event planners, or households preparing for large gatherings.
The whole pork leg is a lean, bone-in primal cut that can be prepared in numerous ways. It can be roasted whole, de-boned and cut into smaller roasting portions, sliced into thin escalope steaks, or dry- or wet-cured to produce ham. Because the leg muscles are heavily worked, the meat benefits from slow-cooking methods such as low-and-slow oven roasting at 350°F for 5–6 hours, or traditional open-flame preparations. A popular preparation is Cuban-style mojo marinade using garlic, oregano, citrus juices, and adobo seasoning. The skin, when roasted at high heat, becomes crispy crackling.
