This is a bone-in New York strip steak cut from the beef loin and graded USDA Prime, the highest USDA quality grade awarded to beef based on marbling and tenderness. The steak has been dry-aged, a process in which beef is stored in a controlled, refrigerated environment for an extended period to allow natural enzymes to break down muscle tissue, concentrating flavor and improving tenderness while moisture evaporates from the surface.
