Garage Wine Co. País-Cariñena "Phoenix Ferment" is a distinctive white wine made from red grapes, sourced from the Maule Valley of Chile. The blend of País and Cariñena (Carignan) grapes is drawn from three local family vineyards, each featuring bush-head vines over 150 years old planted on granitic soils and farmed organically without irrigation.
The "Phoenix" name traces to Chilean bushfires that rendered the fruit unusable for skin-fermented red wine — the winemakers reinvented the harvest by pressing the red grapes as a white wine, rising from the ashes. País is whole-bunch pressed and allowed to begin fermentation; Cariñena is then whole-cluster pressed and the juice is poured directly onto the fermenting País. The wine rests on its lees for eight weeks with weekly stirring, then ages in stainless steel before being bottled unfined and unfiltered with minimal sulfur dioxide. Alcohol: 12.5% ABV. Sold in cases of 12 × 750ml.
The wine is aromatic and fresh on the nose, showing white peach, rose hips, and tangy citrus notes of tangerine and cranberry, with a floral, stone-fruit finish. Garage Wine Co. was founded by Derek Mossman Knapp and Pilar Miranda in the Maule Valley with a mission to revive old, marginalized Chilean vineyards, support small family growers, and practice regenerative farming. The winery uses only recycled bottles and keeps revenue within local communities.
