Cimarron Blanco is an unaged (blanco) 100% blue agave tequila produced in the highlands of Atotonilco, Jalisco, Mexico by master distiller Enrique Fonseca under NOM 1146. The agave used for Cimarron grows at elevations of approximately 4,600 feet, where the high-altitude terroir allows the piñas to develop unusually high sugar content, reaching 24–26° Brix — nearly double that of typical agave — resulting in a bold, expressive tequila.
Expert jimadors hand-select and harvest mature agave plants, whose hearts are then slow-roasted in traditional ovens for two to three days to caramelize their natural sugars. The roasted pulp is fermented using naturally occurring yeast and distilled through copper alembic stills. The final spirit is bottled by hand immediately after distillation, preserving its fresh character. Cimarron Blanco is bottled at 40% ABV (80 proof).
On the nose, Cimarron Blanco offers fresh, bright agave with hints of citrus — particularly lime and grapefruit — along with subtle herbal undertones. The palate is clean and crisp, delivering lively peppery agave flavor, cooked agave sweetness, and notes of pineapple and papaya, balanced by minerality and white pepper. The finish is long and smooth, with lingering warmth and a clean, herbaceous quality. Notably, this tequila is produced at the same distillery where Enrique Fonseca crafts ultra-premium expressions retailing above $400, making Cimarron an exceptional value.
