The 6/9 count designation indicates 6 to 9 shrimp per pound — one of the largest shrimp size categories commercially available — making each shrimp a substantial, impressive portion.
Whole head-on shrimp are prized in Asian, Mediterranean, and Latin American cuisines because the head and shell contribute deep, rich flavor to broths, stocks, and sauces. The intact shell also helps protect the meat during high-heat cooking methods such as grilling, boiling, and stir-frying, keeping the flesh moist and succulent. Commonly sourced from Ecuador, farmed white shrimp (Litopenaeus vannamei) are the world's most widely cultivated shrimp species, known for their mild, sweet flavor and firm texture.
