U-8 Black Tiger Shrimp (Penaeus monodon) are colossal farm-raised shrimp with fewer than 8 shrimp per pound, placing them among the largest shrimp varieties commercially available. Their name comes from the distinctive dark tiger-like black stripes running horizontally across their grayish-brown shells. Individually, these shrimp can be roughly the size of an adult palm.
Farm-raised through aquaculture in major producing countries such as Vietnam, Thailand, and Indonesia, these shrimp offer a reliable, year-round supply. They feature a sweet, mildly briny flavor with a firm, meaty texture that holds up exceptionally well to high-heat cooking methods. Their impressive size makes them ideal for shrimp cocktail platters, grilled skewers, pasta dishes, stir-fries, and pan-seared entrées. Season simply with lemon, garlic, and butter, or use bolder marinades such as Cajun spices or teriyaki—their flavor pairs well with a wide range of global cuisines.
To prepare, thaw in the refrigerator for 6–8 hours or under cold running water. Grill or sauté 2–3 minutes per side just until opaque in the center, or bake at 400°F for 5–7 minutes. Cook to an internal temperature of 120°F and avoid overcooking to preserve tenderness.
