Baccala is traditional salted Pacific cod, a time-honored preserved fish prized in Mediterranean, Portuguese, Spanish, and Caribbean cuisines. Sold by the pound, this whole baccala requires overnight soaking in cold water (changing the water several times) to rehydrate and remove excess salt before cooking.
