The beef round tip roast, also known as sirloin tip roast, is a whole sirloin tip cut from the round primal. This USDA Choice grade roast is sold cap off, meaning the fat cap has been removed for a leaner presentation. The roast typically consists of several muscle groups, each with different grain directions, making it ideal for breaking down into individual roasts or cooking whole and slicing thinly against the grain.
USDA Choice grade beef has excellent marbling and is well-suited for both dry-heat and moist-heat cooking methods. This versatile cut is full of beefy flavor and works exceptionally well when smoked low and slow to medium-rare (135°F internal temperature), slow-roasted in a 225°F oven, braised in liquid until tender, or cooked sous vide for 24 hours.
