Insólito Añejo Tequila is produced at Premium de Jalisco, the highest-elevation distillery in Mexico, situated 7,200 feet above sea level in the picturesque mountain town of Mazamitla, Jalisco — known as the "Mexican Switzerland" for its pine-covered hills and traditional architecture. The name Insólito translates from Spanish as "uncommon" or "extraordinary," reflecting the brand's commitment to crafting a distinctive spirit.
This añejo expression is aged between 18 and 24 months in a combination of American and French white oak barrels. The use of French oak imparts a notable baking spice character, with prominent cinnamon, nutmeg, and a bold agave backbone. The palate is rich and layered, offering caramelized banana, tropical fruit, ample vanilla, and caramel, finishing with notes of charred wood. The spirit is bottled at 80 proof (40% ABV).
The distillery blends both highland and lowland 100% blue Weber agave to create a silky, complex profile. Insólito was founded in partnership with the Double Grammy-nominated country music trio Midland and the Herrera brothers, Octavio and Alberto, who have been producing agave spirits in the highlands of Jalisco for generations.
