Grand Conseiller Pinot Noir is a French varietal wine produced by Bouchard Aîné & Fils, one of Burgundy's most prestigious négociant houses with roots dating back to 1750. The wine is named in honor of Paul Bouchard (1814–1898), the fifth generation of the family who earned the title "Grand Conseiller" through his roles as Mayor, Sub-prefect, and Departmental Counsellor of Côte d'Or. A visionary politician and viticulturalist, Paul founded the Viticultural School of Beaune and helped shape the modern wine industry in Burgundy.
The grapes are sourced from select Pinot Noir vineyards on clay-limestone soils along the Mediterranean coast in southern France, where wide temperature ranges allow the fruit to reach full ripeness and develop the full expression of the variety. Grapes are completely destemmed and fermented in stainless steel vats for 18 to 25 days, with regular punching down and pumping over for gentle extraction of color, tannins, and aromas. The wine is then aged for 6 months, primarily in stainless steel vats with 30% aged in new oak barrels to round out tannins and add complexity.
The wine displays a cherry red color with ruby reflections. On the nose, expect aromas of Griotte cherry and stewed berry fruit, with oaky, toasted hints and a touch of liquorice and smoke. The palate is rich, fruity, ample, and silky, with toasted and grilled flavors developing through the mid-palate. The finish is marked by fine, spicy, and silky tannins that contribute to a well-balanced structure. This wine pairs well with a wide range of dishes including roasted meats, poultry, game, and aged cheeses.
