Eugenio Collavini Pinot Grigio is a dry Italian white wine produced under the DOC appellation of Friuli-Venezia Giulia in northeastern Italy. Made by the family-owned Eugenio Collavini Viticoltori winery — founded in 1896 and now in its fourth generation — this wine represents a classically fresh, mineral-driven style of Pinot Grigio from one of Italy's most celebrated white-wine regions.
In the glass it shows a bright straw yellow with subtle copper highlights. The nose is floral and inviting, offering aromas of fresh-cut hay, lemon, lime, white peach, pear, and apple. On the palate it is dry and lively with light to medium body, crisp acidity, and flavors of citrus, stone fruit, and tangerine underpinned by a pleasant mineral thread. Fermented in stainless steel vats at controlled temperatures of 14–16°C with no oak contact, the wine retains maximum varietal freshness. Alcohol content is 12.5% ABV. Sold as a case of 12 × 750ml bottles.
It pairs well with seafood starters, boiled or poached fish, pasta, rice, vegetable soups, eggs, cold white meats, and light salads. Best enjoyed young and fresh.
