B.R. Cohn Olive Hill Cabernet Sauvignon is an estate-grown red wine from the Sonoma Valley appellation in California, sold as a case of six 750mL bottles. The wine originates from the Olive Hill Estate Vineyards, where hillside blocks positioned between the Mayacamas and Sonoma Mountains benefit from a distinctive microclimate with natural frost protection from geothermal hot springs and low-vigor volcanic soils that produce small, intensely flavored berries.
This full-bodied Cabernet Sauvignon displays a deep ruby color with aromas of black fruit, cassis, espresso, cedar, cigar box, cloves, and mocha. The palate is layered with dark fruit, caramel, and spice, supported by structured, intricate tannins and a long, lingering finish. It is crafted as a 100% varietal wine and carries approximately 14.5% alcohol by volume.
Winemaking begins with hand-sorting and a four-day cold soak, followed by ten days of skin contact and natural malolactic fermentation in barrel. The final blend combines free-run and light press wines to faithfully express the estate's terroir. The wine pairs well with hearty dishes such as eggplant parmesan, braised meats, and rich pasta with red sauce.
