Katafune Daiginjo is a premium Japanese sake crafted by Takeda Shuzo Co., Ltd., a family-run brewery founded in 1866 in Joetsu, Niigata Prefecture, Japan. Now in its tenth generation of family stewardship, the brewery produces Katafune sake using traditional methods rooted in the closing days of the Edo Period, combined with modern technique. This 720ml bottle is a Junmai Daiginjo Genshu, meaning it is brewed without added alcohol or sugar from rice polished to 50% or less of its original weight, and bottled undiluted at its natural strength.
The sake uses locally grown Niigata rice varieties including Koshitanrei, Koshiibuki, and Yamadanishiki, with local underground water that imparts a characteristic richness and sharpness. The brewing process includes handcrafted koji preparation, slow two-week yeast cultivation, and the traditional binkanhiire bottle-warming method for heat sterilization โ immersing each bottle individually in hot water rather than using machine heating. The result is a full-bodied, mellow sake praised by connoisseurs for its luxurious depth, combining the aromatic brilliance of daiginjo with the rich complexity of junmai.
Katafune has twice won the IWC Trophy (top award) at the International Wine Challenge in the Japanese Sake/Honjozo category (2013 and 2015), and has received numerous Gold Awards at the National New Sake Awards and the Fine Sake Awards Japan. It is widely considered one of the leading sake labels in Japan.
