Wookey Hole Cave Aged Cheddar is a premium handmade English farmhouse cheddar produced by Ford Farm in Dorset. Made using milk from local herds grazing on the lush pastures of the Ashley Chase Estate, this cheese is crafted using traditional methods where the cheddaring process, salting of curds, pressing, and cloth bandaging are all performed entirely by hand.

Each wheel is carefully carried 200 feet underground into the historic Wookey Hole Caves in the Mendip Hills of Somerset, where it ages for 6 to 8 months in conditions of constant temperature and humidity. The porous nature of the cheese allows it to absorb the distinctive earthy and nutty flavors from the cave atmosphere. The texture is firm yet creamy with a crumbly quality, while the flavor profile presents a complex interplay of sweet and salty notes combined with sharp, tangy characteristics and an earthy undertone.

This cheese holds Protected Designation of Origin (PDO) accreditation, guaranteeing its authenticity and traditional West Country origin. Pairs exceptionally well with full-bodied red wines such as Cabernet Sauvignon or classic Bordeaux. Not suitable for vegetarians.
