This 100% Chardonnay is sourced from a parcel of approximately 26 ares with an eastern exposure on a gently sloped hillside, with vines planted in 1993 on clay-limestone soils with slight pebbles.

The Domaine du Cellier aux Moines has a storied history dating back to 1130, when Cistercian monks of the Abbey of La Ferté in Givry first cultivated the land. The estate was acquired in 2004 by Philippe and Catherine Pascal and their family, who restored it over a decade while honoring its ancient traditions. The domaine has been certified organic since 2020 and biodynamic since 2023, reflecting a deep commitment to sustainable viticulture.

The wine exhibits a clean, medium-plus aromatic profile with notes of lemon, chalk, flint, peach, cream, and linden blossom, with subtle fennel and saline minerality.
