Heavensake Junmai Ginjo is a premium sake born from a unique East-meets-West collaboration between acclaimed French Champagne cellar master Régis Camus and the historic Urakasumi brewery in Shiogama, Miyagi prefecture, Japan. Heavensake was founded in 2016 when Camus — an eight-time IWC Winemaker of the Year — applied Champagne's art of assemblage to Japan's ancient sake-making tradition, creating expressions that bridge two great beverage cultures.
This Junmai Ginjo is brewed without added alcohol using rice polished to below 60%, yielding a clean, refined sake with a delicate character. The nose opens with bright citrus and lightly sweet honeycomb aromas, giving way to tropical fruit flavors and a smooth, low-acid finish. At 16% ABV and medium dry in style, it contains no sulfites or preservatives and is suitable for vegetarian and vegan consumers. It earned a Silver Medal at the 2019 San Francisco International Wine Competition.
Urakasumi, whose name translates to "Misty Bay," has been crafting sake in coastal Shiogama for over 195 years and remains in its 13th generation of family ownership. The brewery has earned 37 Gold Prizes at the Annual Japan Sake Awards and has medalled every year at the London International Wine Challenge since 2007. After being devastated by the 2011 Great East Japan Earthquake, Urakasumi was painstakingly rebuilt as a testament to its enduring legacy.
Serve chilled at 45–50°F (7–10°C) in a wine glass to appreciate its full aromatics. Pairs well with tuna, tempura, sashimi, and seasonal vegetables. Once opened, refrigerate and consume within two to four weeks.
