The wine is crafted from organically farmed Chardonnay grapes grown in clay-limestone soils with marl veining on southeast-facing slopes. Grapes are harvested by hand with selective sorting and gently pressed using pneumatic presses for gradual extraction. The wine ages for 18 months in French oak barrels (15% new wood) on fine lees without stirring, developing complexity and texture before being blended in stainless steel and bottled according to lunar cycles.
