Billaud-Simon Chablis Les Vaillons Premier Cru, Burgundy, France 750ML

Domaine Billaud-Simon Chablis Premier Cru Les Vaillons is a distinguished white wine from the Chablis appellation in Burgundy, France. Made from 100% Chardonnay grapes, this Premier Cru expression originates from a 0.295-hectare plot on the left bank, planted in very pebbly clay-limestone soils with colluvial deposits on Kimmeridgian subsoil. The vineyard sits on a south/southwest-facing slope and is farmed organically, with full organic certification beginning with the 2025 vintage.

The name "Vaillons" derives from the Latin "vallis," meaning an elongated area between two raised zones — a small valley that imparts a distinctive terroir character to the wine. After harvest, the wine is aged for 14 to 16 months in stainless steel vats, with occasional time in French oak barrels, preserving the pure mineral character of Chablis while adding texture and complexity.

In the glass, Les Vaillons displays a bright, clear hue with attractive golden tinges. The nose offers remarkable aromatic complexity with aromas of ripe citrus and white flowers. The palate is round and seductive with a lively attack, excellent length, and a refined aromatic persistence combining fruity notes and delicate acidity. Wine Spectator awarded it 92 Points, noting aromas and flavors of lemon, apple, green plum, and flint, with excellent balance and aging potential through 2027–2038. The wine is 13% alcohol and is sold in cases of 6 x 750ML bottles.
