André Goichot Mercurey is a 100% Pinot Noir from the Mercurey appellation in the Côte Chalonnaise region of Burgundy, France — one of Burgundy's most important appellations, featuring 32 Premier Cru classified Climats, located approximately 12 kilometers from Chalon-sur-Saône. Maison André Goichot is a respected Burgundy négociant house founded in 1947.
The grapes are destemmed and fermented in vats for approximately four weeks to develop aromatic complexity. After devatting, the wine is aged in oak barrels for 15 months. The result is a ruby-red wine with aromas of raspberries, strawberries, and cherries. With age, the wine develops spicy notes of tobacco and cocoa alongside hints of undergrowth. The palate is rich and fruit-forward with firm young tannins that evolve toward a fleshy roundness at maturity. Aging potential is 5–7 years.
Pairs well with roast pork, poultry, lamb, beef, game, terrines, exotic cuisine, and strong-flavored cheeses. Best served at 16–18°C (61–64°F).
