Hakata 12 Year Old Sherry Cask Japanese Whisky is distilled and matured in Fukuoka, Japan by the Hikari Distillery, founded in 1912. The mash is made from 100% barley, with a fraction fermented using Koji, which provides healthy enzymes and creates the distinctive savory Umami flavor the distillery is known for. Bottled at 42% ABV.

The whisky is aged for 12 years in ex-Sherry casks stored in both traditional and open-air warehouses, where they are exposed to humid summer temperatures of 95°F and winter temperatures around 38°F. This climate variation produces a bold, almost classical flavor while retaining a freshness that is truly unique.

On the nose, expect champagne, dried plums, and sweet dates. The palate delivers stewed fruit, caramelized orchard fruit, and apple cider highlighted by sherry. Oak and Umami gloss over the palate with a striking textural element and complex flavor profile. Imported by Impex Beverages.
