Domaine du Cellier aux Moines is a historic estate in Givry, Côte Chalonnaise, Burgundy, France, with roots tracing back to Cistercian monks who originally constructed the cellier in the 11th century. Today the estate is owned by former LVMH CEO Philippe Pascal, who has transformed it into a state-of-the-art gravity-fed winery while preserving its historic character. It became the first certified organic and biodynamic estate in Givry, having eliminated herbicides and pesticides since 2006.
Le Petit Cellier is a village-level Givry red Burgundy made from 100% Pinot Noir, crafted under the direction of winemaker Guillaume Marko, whose résumé includes stints at Domaine de la Romanée Conti and Arnoux-Lachaux. The fruit is fully destemmed and gently extracted during fermentation. The wine offers aromas of black and white pepper, red berries, and licorice, with a refined, mineral character, medium tannins, and a bold finish. Notably, the village-level bottling is made from old-vine fruit declassified from premier cru vineyards while the estate replants with superior massal selection. Rated 93 points by James Suckling and 92 points by Decanter (Top Producer, Top Value). Pairs well with roast lamb, beef in sauce, and truffled dishes.
